Cooking there is very different from the rest of the Greek cuisine, as there are no Ottoman influences, but rather from Italy and Venice more recently. Corfu is the most typical example of an island influenced both in architecture and in the cuisine by the Venetians, who lived on the island for 400 years. The specifics are related with the food preparation but also with the name of many dishes. Some things are due to the short British presence on the island, but we can say that most people there cook the meals in a pot, which is more typical for the Ionian Islands than for the rest of Greece. The most famous dishes from Corfu are pastitsada made of a rooster in a pot with tomato sauce and lots of allspice (cinnamon, bay leaf and cloves), served with large noodles. This is the most favourite recipe of the people of Corfu who prepare it during the holidays and at weekends. Sofrito is a dish of thin beef filet with a sauce of white wine, lots of garlic and parsley.
