Rosemary can be gathered when in full bloom from mid-May to September. This can be done in the summer. In the first year, the production is low and therefore it is not gathered. In the second year, it gives almost half the normal yield, and in the third year it reaches full yield. The average yield in fresh weight is 1,500-2,000 kg. The ratio of dry substance to green plant is 35%, while stems are 47.5% and leaves - 52.5% of the leaf mass.

The production of dry leaves is 260-350 kg per acre. Gathering is done by machines. Afterwards, it is transferred to desiccators or closed rooms, in order to preserve the green colour. Leaves are separated from the stem by hand. The dry substance is stored in a cool, dry place. The essential oil is produced similarly to other essential plants.
