The ten scents of the Greek summer

The summer – this is sun, sea and light wind in the garden. It also brings the wonderful flavours that our mind associates with the best season of the year as well as the most wonderful memories.

Charcoal-grilled Octopus

The most typical image of the Greek summer is octopus against the background of the island landscape. It is then grilled on charcoal and served with lots of lemon.

The scene: At noon, on some of our favourite islands, the fisherman has just pulled octopuses from the sea and is throwing them on the rocks. The cook takes some octopuses that were left in the sun just for a short time and puts them on the coals. An invaluable view...

Fruit Ice Cream

Probably all kinds, tastes and colours of ice cream are everyone’s favourite thing in the summer. Fruit ice cream, however, is something special and unique and it is characteristic of summer days and nights.

The scene: At the open-air cinema, open-air theatre or a concert and a vendor offering fruit ice cream in a plastic cup with a typical straw. If you cannot find this retro picture anywhere, buy some fruit ice cream in the street...

Watermelon

All of us have at least one photo as children on the beach with a piece of watermelon in our hands and our face in it. A favourite summer flavour, light, rich in water, low in calories, watermelon is the perfect fruit for hot days. It cools, sweetens and satiates us...

The scene: Choose a ripe watermelon, cut it into chunks and put it in the fridge. Enjoy it without worrying that you will stain your clothes. Ideally, add a piece of spicy cheese.

Red Mullet

Fried red mullet is a favourite summer dish that goes perfectly with cold beer served near the sea. If it is fresh, the bliss is exceptional.

The scene: Find a good fish tavern by the sea, let the sea wind blow gently into your face, smell the wonderful aroma of the sea, which is mixed with that of the fish, and let the ice-cold beer flow gently down your throat...

Bean Salad with Herbs

One of everybody’s favourite salads in the summer, it can be combined perfectly with summer fish. Parboiled beans are seasoned with lots of garlic and olive oil, and herbs need a lot of vinegar.

The scene: Returning from the beach, and before you remove the salt from your skin you enjoy a plate of salad with fish or meat.

Charcoal-grilled Sardines

The aroma of charcoal-grilled sardines is associated with summer evenings. On its own, or in combination with garlic and parsley, it is the most delicious fish that smells of the sea. Near the waves it has a different taste...

The scene: You will find the best sardines in Preveza, but if you cannot get there, buy some fresh sardines and throw them on the coals. When ready, enjoy them with a company of friends.

Stuffed Vegetables

This is the most favourite summer dish that Mum cooks. Tomatoes, peppers or zucchini stuffed with rice, sometimes with raisins and pine nuts – we enjoy them on hot summer days.

The scene: Having summer lunch at home on a very hot day, stuffed vegetables are cooked and served slightly chilled on our plate, along with a slice of fresh bread. The holy Greek family knows...

Marinated Anchovies

This is undeniably the best appetizer for ouzo. The aroma of garlic is great mixed with iodine and vinegar and all this fills you mouth with summery flavours.

The scene: A jug of ouzo, sand under your feet, the sun is setting, the anchovy is served on a small plate and releasing its summery aroma.

Figs

They are delicious, large, green, with dark brown shades - the darker, the sweeter. This is the most favourite fruit of summer, and although it is loaded with guilt because of its calories, it smells like summer. You can enjoy the sweetest figs from late July to early September.

The scene: Although it is said that sleeping under a fig tree is hard, the shadow of the tree is unique. Find a fig tree, climb up into the branches, pick several ripe figs and beware of their “milk” because it causes an allergy. Cool off for a while, enjoying the shade and sweetness.

Classic favourite summer sweet that is reminiscent of our childhood years. When one scoop of vanilla or mastic in a glass of ice-cold water was enough to make us dream...

The scene: ''Submarine'' goes well with a sweet Greek coffee under the air conditioner on the blue tables of the cafes on the Cycladic islands in the hot summer – the absolute summer...
