Bring in the New Year with this 'lucky' bright and festive salad, bursting with the red and green colours of the season. Pomegranates are a popular feature of the Christmas and New Year table in Greece, symbolising fertility and happiness. Moreover, on New Year's Eve, as soon as midnight strikes, the tradition is to throw a pomegranate down on the floor, breaking it, to ensure good luck and prosperity for the year to come!

(Serves 4)
METHOD
Wash all the salad leaves and cut into smaller pieces if required. Cut the beetroot and cheese into bite-sized pieces. Toast the pita bread or ordinary bread and cut into a star shape either by hand or with a cutter.
Thoroughly whisk together all the dressing ingredients until combined, or an easier way of doing this is by shaking them in a screw-topped jar. Pour over the salad leaves and toss until coated.
Top with the beetroot and cheese, the pomegranate seeds and any of your other chosen ingredients.
Place the bread star in the centre of the dish.
